HHOG's Dino-mite Guacamole Dip

I planted some dinosaur kale earlier this year. It grew so quickly and we had so much of it, we weren't sure what to do with it.

A friend of ours suggested we make a guacamole dip with it. The results were delicious! Here's the recipe we made:

One bunch dinosaur kale
2 avocados
1/2 red pepper
1/4 red onion
1 tsp lemon juice
2 T olive oil
red pepper, nutmeg and cumin powder for flavor
1/2 cup Parmesan cheese

Mix everything together in blender. Add seasonings according to taste.

We ate the dip with Tostito's Lime tortillas and we also put it on top of some lettuce and tomato from the garden to make an amazing salad.
